Potato hash browns with spinach, avocado, and poached egg
Grate 1 potato add 1 egg and mix together, spoon into frying pan with olive oil until brown. Add salt and pepper. Arrange Hash browns on the plate, top with sauteed spinach, avocado and egg, salt and pepper you can also add your favorite Dukkah. ENJOY.
Manavi Egg and Bacon Pie
This pie is a fav in our household. Great for Breakfast when camping or lunch with a fresh salad. You can mix it up with adding fresh herbs of your choice and topping with chili or smoked paprika. Plus it is really easy to make.
4-6 bacon rashes cut into strips 8 or so eggs bunch of your favorite herbs salt, pepper and spice of your choice
Pastry: 1 3/4 cups plain flour, 90g chilled butter, chopped, 2 egg yokes, enough cold water to bring together (about 4-6 tablespoons) Rub butter into flour with fingers, I like to do this as it is relaxing and you get a better texture, add egg yokes and cut through flour mixture with a knife, add water and slowly bring together with your hands until you have a nice smooth ball. Refrigerate for 30 mins.
Heat oven to 180 degrees. Cut a 1/4 off the pastry so you have some for the top. Roll the base portion of pastry out between 2 sheets of grease proof paper so it can fit into a spring form cake tin coming half way up the edges. Fill the center with bacon, crack whole eggs in and add herbs. Roll out the top portion and lay over the pie folding the edges of the base over the top. Glaze the top with beaten egg white (left over from the yokes that went into the pastry). This helps seal the base pastry to the top. Sprinkle heavily with salt, pepper and any spice you prefer (chili, smoked paprika). Cook for roughly 40mins or until golden brown.
